Homegrown Kitchen: Lovely Summer Salad!

As it grows warmer, (That’s putting it mildly here in Florida!) I start to dream of lovely summer salads eaten under the live-oaks on my farm…

(Something like this, perhaps):

But, since scenes like this are still the stuff of dreams, and my summers are more about speed and convenience, I’ve found some quick recipes to try in order to feed my family some healthy food…even if it’s got to be eaten on the run.

Here’s a salad that is both beautiful and healthy – and, more important, EASY:


Lovely Summer Salad (AKA “Biggest Loser Salad”)

1 head fresh lettuce

1 bunch fresh basil

2 fresh in-season tomatoes

1 cucumber

1/4 red onion


1/3 cup olive oil

4 tbsp lemon juice

1 tsp honey  *vegan: agave nectar

salt (I prefer celtic sea salt) and pepper, to taste

Just chop everything up, mix it together and add dressing!

(You can also add things like fresh avocado or walnuts)

and Enjoy!

Live in bliss…
